


At the heart of Don Txoko are Jose and Dioni.
Raised in south-east Spain, they grew up in kitchens where doors were always open, food was prepared slowly, wine was poured generously, and the table stood at the centre of everything.
Their path led them through respected kitchens and dining rooms across England, Wales, France, and Spain. Each place left its mark, refining their craft while reinforcing a simple conviction: the most memorable meals are those shared.
Over time, they created Spanish Particular, a travelling project shaped by curiosity and a deep connection to their heritage. From London to Bristol, and back to Spain, it became both a journey and a natural step towards something more permanent.
Inspired by the txokos of northern Spain, Don Txoko is the realisation of that vision. Here, cooking remains honest and rooted, gently informed by wider travels.
The room is warm, the welcome sincere, and the table, always, is ready to be shared.
