Jose and Dioni are the heart behind Don Txoko.

Raised in south-east Spain, they grew up around family kitchens, long tables, and the shared pleasure of food and wine.

Their journey took them through kitchens and dining rooms across England, Wales, France, and Spain, shaping their approach and reinforcing a simple belief: the most memorable meals are those shared.

Along the way, they created Spanish Particular — a pop-up born from curiosity and a love for their heritage — sharing their cooking with diners in London, Bristol, and Spain. It became a natural step towards a long-held ambition.

Inspired by the txokos of northern Spain — intimate spaces dedicated to cooking, eating, and drinking together — Don Txoko is the realisation of that ambition. Here, honest Spanish cooking is paired with gentle global influences, served in a warm, welcoming setting where conversation flows and everyone is encouraged to feel at home.
