


Jose & Dioni are the heart behind Don Txoko.

Raised in south-east Spain, they grew up with the rhythms of family kitchens, long tables, and the quiet joy of sharing food and wine.
Their journey carried them through kitchens and dining rooms across England, Wales, France, and Spain, shaping their craft and strengthening their belief that the most memorable meals are those shared with others.

Along the way, they created Spanish Particular, a pop-up born from curiosity and love for their heritage, through which they shared their flavours and vision with diners in London, Bristol, and Spain. This chapter became a natural stepping stone towards a long-held dream.

Inspired by the txokos of northern Spain — intimate spaces devoted to cooking, eating, and drinking together — Don Txoko is the realisation of that dream. Here, honest Spanish cooking meets gentle global influences, offered in a warm and welcoming setting where time slows, conversation flows, and everyone is invited to feel at home.
