At the heart of Don Txoko are Jose and Dioni, both raised in south-east Spain, where food was shaped by seasonality, generosity, and time spent around the table.
Their careers have taken them through kitchens and dining rooms across Spain, France, Wales, and England, each experience refining a shared approach rooted in respect for produce and clarity of flavour.
Don Txoko is the culmination of that journey, a modern Spanish asador in Norwich focused on fire-led cooking and seasonal British produce. The menu is built around refined sharing plates and dishes from the fire, reflecting a style that is both disciplined and expressive.
The restaurant draws inspiration from the Spanish tradition of communal dining, where cooking and sharing sit at the centre of the experience. Here, the focus remains on honest cooking, precise execution, and a calm, attentive dining room.
